I would spend hours upon hours playing RCT2 and 3. Despite what everyone else says, I did enjoy RCT3 quite a bit considering that the big thrill for me was building the ultimate park, and making it look just as cool. I did spend quite a bit on RCT3, even built two indoor theme parks with roofs and everything in addition to completing the career mode on the hardest difficulty. Despite that, RCT2 remains my favorite. The scenery wasn't as good, but the game itself just flowed a lot better. The best park I ever made was a custom one I made in the scenario sandbox. I made a beach with a long boardwalk. The reason why it was my favorite was because the boardwalk made it look really cool, and the roller coaster that I built exploring it fit extremely well. I ended up putting some coasters on the beach, adding a bunch of scenery to make it look better, and I was able to max out the park rating at 999 with the only complaints being that the park was too crowded. Unfortunately, I don't have that park anymore, but it remains in my memory as my greatest RCT2 achievement. As far as building roller coasters go, look up Slayr231 on youtube, and you'll find quite a few that I built. It was half the fun.
